The Farm
Santolina sits on 30 cultivated acres of lush olive groves, fruit trees, and beautiful lavender fields, with another 100 acres of wild Tuscan forest, replete with cork trees and holm oaks, and of course, the elusive truffle. And deep in the woods, the most famous of all Tuscans: the cinghiale, or wild boar. This is Tuscany at its most wild, and we wouldn’t have it any other way.
But we live with the wild, not against it. Our vegetable garden supplies the kitchen with fresh, seasonal ingredients, and in the fall we work alongside our local hunting club to harvest the cinghiale as well, as they have done in the area for hundreds of years. As stewards of the land, we continue the traditions of those who came before us, and offer our guests to share in those traditions with us too.
Harvest
When was the last time you put your hands in the dirt and came up with something incredible? Come join us at Santolina during our favorite time of year when the land offers up its best and the whole property comes alive: harvest season.
Late July: Lavender harvest. Come walk the lush lavender fields in the sunshine and help distill your own oil, create your own perfume, or simply dry a bouquet to hang in your room.
October to November: Olive harvest. Beat the olive trees with our local harvesters and learn how to take this simple fruit and turn it into the most sumptuous oil you’ve ever tasted.
Year Round: Truffle hunting. Different varieties of truffle are in season across three distinct windows: the delicate Marzuolo truffles in late winter and early spring, black summer truffles from May through August, and the prized white truffles in the heart of autumn.
