It wouldn’t be a visit to Italy without learning to roll some pasta. Learn to cook from our talented chefs and not only learn to roll the pasta, but also try your hand at searing a Fiorentina steak, or tell us what you have always wanted to learn behind the range, and let us build you a unique class around your ideas.
Gather Around the Fire
There is something about sitting around the fire that speaks to our very nature as humans. Gather at one of our three firepit areas for conversation, music, drinks and s’mores. In the colder months, rediscover the lost art of roasting chestnuts on an open fire.
Hiking
With miles of trails crossing our property, you could spend a week and never explore them all. Grab a pre-stocked backpack, a walkie talkie and a map and hike along the creek and untouched natural forest, or follow the Italian trails to the nearby towns of Iesa and Castello di Tocchi to find some local lunch.
Bocce Ball and Lawn Games
Have a friendly game and enjoy a cold beverage while tossing a few bocce balls. Or build a bracket-style competition to see who reigns supreme at lawn games such as badminton and cornhole (and maybe also try your hand at classic Italian games like ruzzola and pallino).
Art in Nature
Choose from our hand-selected art materials to enjoy the Italian pastime of pittura dal vero, or ‘art from life.’ We deliver your supplies to your favorite vista, where you can create your masterpiece. Don’t worry about packing your painting back to your home—we will happily ship it for you.
Karaoke
Singing is a lot like bowling—you don’t have to be good to have a good time. Kick back in the taverna and pick your own songs, or let us load you up with our curated Best Karaoke Night Ever playlist.
The Perfect Cappuccino
Be a barista for an hour and learn how to make a proper Italian cappuccino with our a professional-grade machine.
Dark Sky Astronomy
Channel your inner Galileo and turn your eyes to the stars. Situated in one of the lowest light polluted areas in all of Tuscany, Borgo Santolina is the perfect place to admire the night sky with our state-of-the-art telescope.
Scavenger hunt
Follow clues to discover the hidden toy closet, home to an array of non-electronic toys from eras past that keeps the kids entertained for hours. Or grab a map to run around the farm to find the ‘buried treasure’. Our scavenger hunts will keep the kids entertained for hours (and they’re designed to be fun for the adults too!).
Wildlife Spotting and Bird Watching
The Riserva Naturale Merse is home to over 38 protected species of birds and mammals, many of which can be spotted on our property. Take your camera or use one of our professional point-and-shoots and follow our wildlife trails to look for the abundant roe deer, or the rare short-toed eagle.
Cocktail Making Lessons
What’s the secret to our perfect Negroni? We will show you! Learn to bartend from the pros and take home all of our recipes, or if you prefer to be more hands off, sit back and try a liquor flight or a grappa tasting instead.
Fishing
Borrow a rod from the outfitters and try your hand at fishing or just enjoy the walk along our half mile creek frontage.
Movie Night in the Tavern (or Poolside)
Enjoy a quiet night with a movie and popcorn in the tavern watching on our projector and screen or if the night is warm, let us set up movie night at the pool with our inflatable screen.
Darts in the Tavern
The dart board is in our cozy tavern. Gather your group, grab a drink and enjoy friendly competition with classic games like Cricket, 501 and Around the World. It is an easy way to unwind between adventures and adds a bit of playful rivalry to your stay.
Olive Oil Tasting
Olive oil tasting invites your group to explore the flavors of Tuscany through our estate-grown and local olive oil varieties. Sample different harvests, learn how to identify quality and discover the subtle notes that make each varietal unique. It is a simple, sensory way to connect with the land and deepen your appreciation for what we produce here.
Chill Out in the Audio Room
With a selection of vinyl from different decades, pick your favorite and relax and enjoy an album end to end in a comfortable lounge chair.
Board Games and Poker
The borgo is stocked with puzzles, chess, checkers, board games, cards, a poker table to keep you entertained. Can find the secret chess and backgammon stone tables amongst the gardens?
Farm Tours
Join one of your hosts for a farm tour to walk the lavender fields, olive groves and vegetable garden and learn about the organic farming operation, green houses, irrigation and cork harvest.

Hot Air Ballooning
Get views you can't find anywhere else on this hot-air balloon ride over Tuscany. Starting in Siena, float above the countryside and take in scenic views of the low-rolling hills, some clad in grape vines, others crowned by a rustic ancient villa. Ascend as high as 2,000 feet (609 meters) and enjoy seeing the countryside and surrounding ancient villages and towns. Upon landing, enjoy a glass of sparkling wine to celebrate your experience.
